Looking for a simple snack that requires minimal ingredients and can be put together quickly? Then look no further because these healthy chocolate peanut butter bites have you covered. At first glance, chocolate and peanut butter may not sound like the healthiest combo in the world, but these peanut butter bites are made with natural dark chocolate peanut butter for your healthy fat, chia seeds for your omega 3’s and gluten-free oats for your whole grains. Throw in a little vanilla and unsweetened coconut and you have the perfect bite size snack! These chocolate peanut butter bites work great as a frozen after dinner treat or a mid-afternoon snack for a little energy boost. And if chocolate isn’t your thing, try regular creamy peanut butter or almond butter instead! For those with nut allergies, this recipe would also taste great with sunflower seed butter.
Healthy chocolate peanut butter bites Ingredients: 1/2 cup dark chocolate peanut butter (I recommend Peanut Butter & Co. brand) 1 tablespoon chia seeds 1 cup old-fashioned gluten-free oats 1 teaspoon vanilla 1/3 cup unsweetened coconut flakes Directions:
- In a food processor add your peanut butter (you might want to soften it a bit in the microwave first), chia seeds, oats, vanilla and coconut and blend well.
- Roll your mixture into small balls and place on parchment paper.
- For frozen peanut butter bites, place them in the freezer for 30 minutes to 1 hour. Otherwise, chill in the fridge and enjoy!
